Aged for six or seven weeks, this lactose-free semi-soft farm cheese is made with pasteurized milk. It is hand-rolled and its spiral-shaped layer of vegetable ash is reminiscent of a bundle of hay. Its name, Le Ballot, comes from the French word for bale. This cheese has a strong woody aroma and a caramelized buttery flavour. It pairs very well with a medium-bodied fruity wine.
