This soft double-cream cheese with a bloomy rind is made from pasteurized milk and cream. The ivory interior of this Brie is remarkably supple and designed so as to obtain an immaculate rind.
Rigour. Strictness. Perfection. In honour of Emperor Bonaparte, the artisans created a practical version of the conventional soft cheese that lends itself well to many fruit-, sugar- and nut-based recipes.
Le Bonaparte is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
