This fresh farm cheese is made with pasteurized whole milk from the family’s herd of Brown Swiss cows. It is available plain or in chive flavour and fits perfectly in many recipes such as soups and sauces. Eat it plain with garlic, basil or smoked salmon, or serve the chive-flavoured version as a snack, an appetizer or a side dish. Its name, Le Cabrouet, comes from the French word “cabrouet,” the ancestor of the wheelbarrow, which refers to an ox cart with two wheels.
Le Cabrouet is available at the Fromagerie Médard and in most grocery stores and specialty cheese shops in the Saguenay–Lac-Saint-Jean region.
