This firm lactose-free cheese with a washed rind is made with pasteurized milk. It has a supple and smooth texture. It is similar to the Cantal cheese in France and offers strong notes of butter and caramel, followed by light aromas of musk and caramelized onions. Available in 2 kg wheels, in wedges or sliced in some stores.
