This is a semi-soft, surface-ripened, uncooked pressed cheese with a washed rind. Made from pasteurized milk, it has asupple, wheat-coloured interior that features a horizontal stripe of vegetable ash. When young, the cheese has a mild, fruity flavour and hazelnut and hay aromas. With age, it develops a distinct flavour that delights even the most discriminating palates. The winner of many awards and prizes, Le Cendré placed first at the 2005 Sélection Caseus, third and first in its category, respectively, at the 2006 and 2007 British Empire Cheese Show, and third at the 2006 and 2007 Royal Agricultural Winter Fair.
