M.F. : 27% Moisture : 46%This semi-soft, bloomy-rind cheese is made from pasteurized milk. Parts of the thin layer of black vegetable ash that covers its surface peek through the bloomy rind. Its pure white interior has a dominant aroma of fresh cream. On a platter, it is perfect for the first service, standing out through both its aroma and its appearance. It pairs well with a Chardonnay.
Le Cendré de Notre-Dame is available at specialty cheese shops and at several supermarkets.
Accompaniments

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.
