Lactose-free and rindless, this firm cheese is made from pasteurized milk and is interior-ripened for six weeks wrapped in black wax. Seasoned with cumin seeds, Le Coureur des bois asserts its strong character with a pronounced aroma and its flavour marked by this Indian spice. Its interior is smooth, elastic, supple and strewn with small holes (eyes) and cumin seeds.
Very comfortable on the barbecue, it enhances sliced meats and burgers. Presented in the third service at a tasting, it concludes meals deliciously with its strong touch. It enjoys the company of full-bodied beers, semi- or full-bodied red wines as well as Port wine or sweet whites, ice wine and cider.

Awards and distinctions
Finalist at the 2015 and 2014 Sélection CASEUS compétition, in the Flavored Cheese by Addition of Spices, Vegetables, Fruits or Nuts category. Le Coureur des bois also finished second in the Flavored Cheeses category at the 2011, 2007 and 2004 American Cheese Society Judging & Competition, was a finalist in the 2010 Sélection CASEUS and won fourth place in the 2008 World Championship Cheese Contest.
