M.F. : 32% Moisture : 35%This firm, washed-rind farm cheese is made from whole raw milk from a herd of Ayrshire cattle from Fromagerie l’Autre Versant. The rind of this raclette cheese has an aroma of fresh mushrooms, while its interior reveals hints of almond and roasted hazelnuts. When cooked or reheated, this cheese unveils even more hidden flavours. It is especially delicious on grilled crouton with tuna.
The adventure started in the 1800s when a young couple, Yves-Luc Tremblay and Sophie Ouellet, set out on Des Aulnaies River and arrived at Hébertville. Since then, five generations of farmers have lived on this heritage farm. The current owners, who have been on the farm since December 2000, achieved their dream of creating a farm cheese using milk from their own herd. The cows are treated with respect and have a diet mainly based on fresh herbs from the field and natural dry hay.
