It is turned, rubbed and washed with as much care as its cousin, Le Louis-Dubois, and has the added distinction of being aged in Pomme de glace ice cider, a highly acclaimed spirit made by the Clos Saint-Denis orchard on the banks of the Richelieu. This unique cheese has a soft, creamy, generous texture that lingers in your mouth, allowing you to savour the discovery of aromas and flavours of a cheese that has reached new heights, enriched and balanced by the aromas and flavours of ice cider.
Aside from the fact that it’s a true delight, its name, Le Délice des Appalaches, is inspired by the fact that the cheese maker is located in Plessisville, at the foot of the Appalachian Mountains, a region where the climate is especially conducive to growing exceptional forage and raising dairy herds of unparalleled quality.
Le Délice des Appalaches is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
