M.F. : 28% Moisture : 44%Aged for more than 60 days, this semi-soft, organic farm cheese with a washed rind is made with pasteurized organic milk that is drawn directly from the herd of Holstein cows on the Raymond Alary and sons family farm, where the cheese maker is located. The interior has a supple, melt-in-your-mouth texture and aromas of butter, peanuts, hay and a touch of farm goodness. It is divine with Quebec microbrewery beer.
The cheese maker likes to name its products after medieval-sounding things. The name Le Fou du Roy, a reference to the jester, whose job it was to make the kings and lords laugh, is a good example. Owner Ronald Alary says that “the name Les Fromagiers de la Table Ronde is a proud reference to the Knights of the Round Table, because we make our decisions together, seated at a table.”
Le Fou du Roy is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.
