Aged between 30 and 75 days, this semi-soft cheese is made of pasteurized milk from a single herd of cows owned by one of the cheese maker’s neighbours. The orangey rustic rind is washed early in the aging process and has a light white fluff. The interior has a creamy, melt-in-your-mouth texture and a pleasingly mild taste, with delicate aromas of fresh milk and wildflowers. On the palate, the cheese takes on a delectable hazelnut taste.
LE FREDDO is named after Frédéric Guitel, one of the two founders of the Fromagerie La Suisse Normande.
LE FREDDO is available from the cheese maker, at specialty grocery stores and cheese shops, as well as in some supermarkets.
