Aged 20 to 30 days, this soft, mixed rind cheese is made with a masterful blend of pasteurized cow, goat and ewe’s milk, which gives it a unique flavour with aromas of butter and cream, and a caprine finish. Its thin, cream-coloured mixed rind reveals a beautiful supple soft cheese. It pairs well with an Alsatian white wine.
The cheese has been made by Fromagerie La Suisse Normande since 2008, and its name, Le Grand Manitou, which is French for “great honcho,” alludes to the fact that only such a brilliant person can make such a good cheese with a blend of three milks.
Le Grand Manitou is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.
