Aged between 12 and 15 months, this firm cheese with a natural brushed rind is made from thermized milk. Le Hermann has a brown crust and a pale yellow interior. It features sweet hazelnut and butter aromas, and a medium-intensity flavour that becomes more pronounced when the cheese is heated or grilled. Its taste has hints of mushrooms and nuts. This cheese is excellent grated over pasta or in salads of all kinds. It is also delicious in a raclette, grilled in panini or just melted on meats.
Olivier Ducharme, the first owner of the Fromagerie Du Charme, named this cheese Le Hermann in honour of his paternal grandfather Hermann Ducharme, who taught him his love for the food industry and local tastes. His grandfather owned the family dairy farm, which was taken over by his father Jacques and is now owned by his brother Vincent. Having himself been raised on this farm located close to the cheese maker in Saint-Rémi-de-Tingwick, Olivier found it natural to thank his grandfather in his own way for leaving him such a wonderful legacy, such passion and such a rewarding profession. It is now Suzanne Bergeron, owner of Fromagerie Du Charme since 2015, which embodies Oliviers' tribute.
Le Hermann is available from the Fromagerie Du Charme as well as in many specialty cheese shops.
