This firm, rindless cheese distinguishes itself because it is made with pasteurized milk drawn directly from the herd of Jersey cows from the Lemeric farm located near the cheese maker. Although the cheese is firm, its texture is soft with a slightly elastic texture. This Cheddar offers up a buttery aroma and a mild, velvety taste. The Cheddar block is available in salted and unsalted versions.
