This firm, lactose-free cheese is made from pasteurized milk and is interior-ripened for an extended period. It is wrapped in yellow wax. Le Lotbinière is unmistakable thanks to its shiny holes, its gently sweet aroma and its hazelnut taste. It is a perfect complement to cold beer and salty snacks, and lends itself beautifully to making sauces, fondue or raclette. It comes with the second serving at a tasting. Le Lotbinière is perfect company for strong-flavoured beers, full-bodied white wines or light reds.
Why the name Le Lotbinière? Master cheese makers have the long-standing tradition of naming their best cheeses after their region. It is a sign of appreciation and pride that we at Fromagerie Bergeron are more than happy to perpetuate. The result is that the Lotbinière name can now be found next to Brie, Jarlsberg, Emmenthal, Oka or Camembert.
