This soft, washed-rind cheese is made from pasteurized whole milk, and contains no modified milk ingredients. Its rind is formed by rubbing the surface with a washing solution for about two weeks. The ripening process then continues for three to four weeks. Under the rind, you’ll find a delicious, soft interior with a pronounced aroma worthy of the finest palates.
Its name, Le Mackenzie, comes from an enchanting spot right near the Fromagerie des Basques: the Sault Mackenzie waterfall, which flows into Des Trois Pistoles River. Since it was founded in 1994, the Fromagerie has become a major attraction. It has a splendid view of the St. Lawrence River and of Île aux Basques, which it is named after.
Le Mackenzie is available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.
