This soft, bloomy rind cheese is made from a blend of pasteurized milk drawn from Holstein and Jersey cows. Its aroma is that of fresh mushrooms. The cheese is supple and smooth, with a very sweet taste featuring hints of butter and cream. Its texture is silky and becomes quite runny with age.
The cheese maker instinctively gave the cheese its name, saying at its launch: “One day, the cheese will live up to its name!” The cheese’s Grand Prix championship seems to have proven him right!
Le Noble is available from the cheese maker, in specialty grocery stores and cheese shops as well as in most supermarkets.
