Soft with a bloomy rind, this cheese is made from pasteurized milk using traditional methods. It offers both a delicate flavour and creamy texture. It has a very mild flavour when young. As it ripens, its white rind develops a reddish hue, and its flavour becomes more distinct, developing subtle notes of fresh butter, mushroom and hazelnut. The interior of the cheese is soft and smooth with a creamy, velvety texture. Available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
