Made from pasteurized milk, this soft, washed-rind cheese is easily identified by the red casein stamp in its centre. It has a delicate flavour and smooth, creamy interior that melts in your mouth. When young, its delicate, subtle flavour has notes of fresh bread. With age, the cheese develops a rich, creamy flavour with floral and hazelnut notes and a hint of hay and dried herbs.
Petit Rubis is available from the cheese maker, at specialty grocery stores and cheese shops and in most supermarkets.
