Made with pasteurized milk from a single herd of cows owned by one of the cheese maker’s neighbours, this soft farm cheese with a bloomy rind smells of fresh milk and mushrooms. A creamy white, its interior is smooth, melt-in-your-mouth and sometimes runny. Its mild, milky flavour is a true delight, with notes of salted butter and a hint of bitterness that results from its degree of ripening.
Pizy is the name of a small village in the Swiss canton of Vaud, where Fabienne Guitel, one of the cheese shop’s founders, grew up. It is home to Tomme Vaudoise, a cheese that Le Pizy is a Quebec version of. Le Pizy has been produced since 1996.
Le Pizy is available from the cheese maker, at specialty grocery stores and cheese shops, as well as in some supermarkets.

2016 and 2015 Sélection Caseus competition finalist in the Bloomy Rind Cheese class. First prize winner of the Prix de l'École de laiterie award in the Fresh and Soft Cheeses class at the 2010 Sélection Caseus competition.
