This soft cheese with a bloomy rind is made with pasteurized milk and cream. Round on the palate and mild, this double-cream Brie offers an aroma of mushrooms and fresh cream with a butter and cream finish.
Delicious as is or cooked, as recommanded in this grilled salmon recipe.
Its name is a nod to the Canadian National Railway swing bridge in Noyan, on the Richelieu River, which is a Lake Champlain effluent. The bridge is well known to boaters on the Richelieu River who travel to or from Lake Champlain. Le pont tournant cheese was launched in 2014 by the Fritz Kaiser cheese maker, also located in Noyan.
Le Pont Tournant is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
