Firm
M.F. : 30 % Moisture : 43 %Le Populaire is a cheese made fresh daily from pasteurized milk. It is prepared by putting Brins de Gouda Bergeron curds in a mould and gently pressing them so they meld together to form a brick. The cheese loses some of its moisture during this process, which is why Le Populaire is a firmer cheese.
Here’s an interesting and unusual fact: like for Brins de Gouda, the recipe for Le Populaire is patented, which goes to show just how original this cheese is.
Le Populaire is available from the cheese maker. It is distributed mainly in the greater Québec area but is also available in Costco stores in the Montréal and Trois-Rivières regions.
