This soft, washed-rind cheese is made from pasteurized milk and cream. Its makers claim you can tell true master cheese makers from the balance of their soft washed-rind cheeses. Upon achieving a perfect harmony of mushroom, cream and fresh butter flavours, they didn’t hesitate in naming this cheese Le Reflet de Portneuf.
Le Reflet de Portneuf is available from the cheese maker, at specialty grocery stores and cheese shops and in most supermarkets.
