M.F. : 31% Moisture : 39%This firm, rindless farm cheese is made with pasteurized milk from the Beauregard farm, located adjacent to the cheese maker, which gives the cheese superior aromas and subtle flavours that are unique to the Normandin area. It features a cream colour and a buttery aroma with a hazelnut taste that becomes stronger with age. This Cheddar has a melt-in-your-mouth texture, and the more aged it is, the more tiny salt crystals are perceptible. In addition to enhancing your au gratin dishes, sauces and even your chili, these aged Cheddars are wonderful as desserts; pair them with nuts or chocolate—or use them in a cake!
The La Normandinoise line of aged Cheddars pays homage to the farming couple, Yvon Fortin and Hélène Cadieux, who are the fourth generation to own this family farm.
