This semi-soft, surface-ripened cheese is made with pasteurized milk and has an orangey rind covered with a fine, white bloom. The 40 days of fine refining provides a strong wild mushroom flavour to the cheese, with a herbal, milky aroma. The interior is smooth and creamy. This cheese pairs well with an aromatic and supple wine.
Located in Repentigny in the Lanaudière region, the Fromagerie Champêtre brings a touch of history to this cheese through its name, Le Sieur de Le Gardeur, which pays homage to Pierre Le Gardeur, the first lord of Repentigny, and his son Jean-Baptiste Le Gardeur, who founded Repentigny in 1670, where hundreds of farmers lived off the land for 250 years. The Fromagerie Champêtre is proud to produce this cheese entirely of milk, without modified milk ingredients.
