This firm cheese is made with pasteurized milk and aged for about 60 days. The rind is covered with a purple-coloured paraffin wax. The cheese has a sunshine-yellow colour, a soft texture and is a brilliant accompaniment to wines and sweet and salty entremets. Le sieur Riou-x is available in regular or lightly smoked with maple wood.
Lord Nicolas Rioux, founder of the estate of the same name and ancestor of many of the region’s residents, was the cheese maker’s inspiration in creating this semi-soft cheese.
Le sieur Riou-x is available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.
