Firm
M.F. : 31 % Moisture : 43 %A firm, rindless cheese made from pasteurized milk. This Cheddar is aged for two years and steeped in Le Ricaneux Portageur, a berry porto made in St-Charles-de-Bellechasse.
We recommend serving it at the end of a meal, but it can also be paired with fine chocolate or a glass of wine with friends.
Cheese curbs
Tasty, tender and always fresh, these cream-coloured cheese curds carry a delicate hint of butter on the nose and a mild and salty flavour. Also available with herb or BBQ seasoning.
Le St-Charles is available from the cheese maker, at specialty grocery stores and cheese shops, and at most markets in the region.
Accompaniments

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
