Made with pasteurized milk, the aromatic richness of this soft cheese with a washed rind reveals, among other things, a turnip smell. Its salted butter taste also features a range of complex flavours. Suppleness is also part of its features. Being a cheese with a lot of character, L’Empereur is aptly named. There is also a lighter version of this cheese made with pasteurized partly skimmed milk.
