Inspired by the best authentic Camemberts from Normandy, this soft cheese is known for its very finely textured bloomy rind that wrinkles with age, which ranges in colour from off-white to deep tan. Made from pasteurized milk, its firm texture softens to become delectably runny and creamy. When young, the cheese smells like fresh bread and tastes like tart milk. Once aged, it has an aroma of sweet bread with distinct but subtle notes of hay, and it melts in your mouth with a spicy hint of floral honey.
