M.F. : 28% Moisture : 45%This semi-soft washed-rind cheese is made from pasteurized whole milk, and contains no modified milk ingredients. It is first aged in a cold room for two to three months before being surface-ripened with a brine rub for two to three weeks. The result is an interior dotted with small holes and a pleasant, delicate fruity flavour.
This uncomplicated cheese has earned a choice spot in cooked dishes, and it is perfect on the first serving platter of a tasting. No need to wait for special occasions—it works fine on the family table. L’Héritage is a fun treat to enjoy together!
L’Héritage has a great story behind it. This cheese was derived from the company’s identity, which was based on the eponymous Basques RCM and the legacy the Basques left to the region’s history. It is made according to the Basque Country’s traditional method when cutting the curd, pressing, shaping, brining and ripening the cheese in the ripening room. Each round is rubbed, turned and monitored by the cheese maker throughout the ripening process.
L’Héritage is available at the Fromagerie des Basques and in the refrigerated section of supermarkets, convenience stores and service stations as well as in several fine grocery stores and specialty grocery stores, from La Pocatière to the Gaspésie region and all the way to the border of New Brunswick.
