This firm, rindless cheese is made from pasteurized whole milk and contains no modified milk ingredients. The butter-yellow interior of this cheese, which is typical of Emmental/Swiss-type cheeses, is dotted throughout with round holes. More than 600 hours of aging give it a rich texture and lightly creamy mouthfeel, with notes of hazelnut.
Its name, L’Oeil du Suisse, is a play on words, referring to the holes (known as “eyes” in the cheese-making world) found in Swiss cheese.
L’Oeil du Suisse is available from the cheese maker and at some supermarkets in the Québec region.
