Aged between 20 and 25 days and made with pasteurized milk drawn exclusively from Canadienne cows in the Charlevoix region, this soft, mixed rind cheese features a taste and texture that bring to mind the French Reblochon cheese. Under its orangey-yellow rind, which is covered by a fine white bloom, is a creamy white interior with a persistent hazelnut taste.
In referencing a meteor strike in Charlevoix 350 million years ago and the resulting mountainous terrain, the name L’Origine de Charlevoix is a nod to the region’s unique soil and to the presence of Canadienne cows in its mountains.
L’Origine de Charlevoix is available from the cheese maker and in specialty grocery stores and cheese shops.
