This semi-soft, washed-rind cheese is made with certified organic thermized milk from a single herd of Holstein cows. It is ripened for over 60 days, and its rind is washed with mead from the Vieux Moulin, a honey wine from Ste-Flavie, which gives it an amber colour. The floral aromas of this creamy cheese with a lingering flavour develop into a touch of fresh apple.
The name Lune de Miel was inspired by the fact that the cheese is ripened with honey wine and has the round shape of a wheel, like a full moon.
