This semi-soft, uncooked pressed cheese is interior-ripened for 2 to 3 months and made with pasteurized cow’s milk. Under its black edible film is a smooth and creamy white cheese with a slightly tangy taste of fresh milk. It is perfect with an amber beer or a fruity, vibrant wine.

Mouton Noir is available from the cheese maker, at specialty cheese shops and in most supermarkets.
