An unripened, semi-soft, rindless cheese made from pasteurized milk. This smooth-surfaced cheese has an elastic texture composed of long fibres of parallel proteins, with no curds. It has an even colour and solid texture, and features a mild, slightly acidic taste.
Available grated or in easy-to-slice blocks.
