This firm, pressed and cooked farm cheese is surface ripened for 6 to 9 months and made with thermized milk drawn from the herd of Holstein cows on the family farm. Under its orangey pink rind, this cheese has a golden colour, sometimes strewn with small holes. It has a milky aroma with hints of fruit and vegetable and a fruity flavour that lingers in the mouth, leaving a hint of spice. Napoléon is delicious when served with fresh fruit or when used in a quiche, omelette, soup, croque-monsieur or sandwich, on pasta or in a cheese fondue.
The fourth generation of Blackburns chose to name the cheese Napoléon in honour of Napoléon Blackburn, founder of the company.
