This semi-soft washed-rind cheese is surface-ripened for more than 6 weeks and made with pasteurized milk. It has a smooth rind that varies in colour from pale pink to coppery orange. The cheese has a cream colour and is dotted with small holes, while its texture is smooth and elastic. Its milky, very slightly acidic aroma brings to mind fresh mushrooms, and its taste of milk and nut intensifies with age. This cheese goes perfectly with an amber beer or an aromatic and mellow wine.
Its name, Noyan, is a nod to the municipality of Noyan on the shores of the Richelieu River in Montérégie, where the cheese maker is located.
Noyan is available from the cheese maker and in most supermarkets.
