This unripened fresh organic cheese has a very slightly tangy and salty taste. This Old-Fashioned Cottage Cheese is made using artisanal methods and pasteurized skim milk left over from butter production. Curdled milk is stirred very slowly and carefully while cooking until perfect, soft curds are formed. Then, the curds are rinsed off to get rid of the tartness before pasteurized cream and salt are added.
In 2004, cheese maker Diane Groleau from the Beurrerie du Patrimoine took up the challenge of elevating cottage cheese from the standard set by commercial cheeses to the way it was meant to be made. This means no additives or preservatives are used, and you can taste the difference!
Old-Fashioned Cottage Cheese is available from the cheese maker, some grocery stores and specialty cheese shops in Estrie, the Centre-du-Québec, Montréal and Québec.

Silver medal at the Canadian Cheese Awards in 2011, as well as winner of the best unripened cheese category at the 2007 and 2005 Sélection CASEUS contests.
