M.F. : 30% Moisture : 34%This firm, washed-rind cheese is made from pasteurized milk. It is ripened naturally in ripening rooms for at least six months, and its character is revealed over time. It exudes rich nutty, buttery touches, and its orange rind gives it a caramel flavour that melts in the mouth. Its taste calls to mind a loaf of country-style bread accented with orange zest.
The Pacific Rock cheese gets its name from the beautiful and wild Canadian West Coast, which is bordered by steep cliffs that drop into the sea. Once upon a time, Alexis traveled to his love by Canadian Pacific train and was charmed by the landscapes he saw along the way.
The Pacific Rock is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.

Accompaniments

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
