M.F. : 33% Moisture : 37%Made from pasteurized milk, this firm cheese with no rind is a cheddar made using traditional methods. Unripened, the external colour of the cheese blends with the yellowish color of its paste, which is sometimes dotted with small holes. Its texture is creamy and, as it ages, the richness of the milk results in a smoothness in the mouth.
Young
When young, Le Petit Émile gives way to aromas of hazelnut and butter.
6 months
At 6 months old, it leaves a more pronounced taste worthy of third servings. In addition to its more pronounced character, this aged cheddar features an alcoholic hint that is very pleasing to the palate.
The origin of Petit Émile is inspired by the name of the cheesemaker's son, an ardent fan of cheddar.

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
