M.F. : 30% Moisture : 44%This semi-soft, washed-rind pressed farm cheese is ripened for three to four months and is now made with thermized milk drawn from the Lehmann farm’s herd of brown cows. Beneath its fine orange-coloured rind is a golden-yellow interior that’s supple and dotted with small holes. This medium-bodied cheese features fruity aromas and a buttery flavour with hints of hazelnuts.
The cheese was first produced in 2005. Inspired by a Félix Leclerc quote, “Our lives are like rivers: sometimes deep and calm, other times shallow and turbulent,” the cheese makers named Pikauba after a river that runs through the Parc des Laurentides.
Pikauba is available from the cheese maker and in specialty grocery stores and cheese shops.

Accompaniments

These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.

These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
