This firm cheese with washed rind is the result of a joint effort by two cheese lovers, the Fromagerie du Prestbytère and the Fromagerie Nouvelle France. The impressive 40 kg wheels are made from a mixture of raw cow’s milk and sheep’s milk from the herds of each cheese maker.
After aging for 10 to 12 months, the Pionnier offers complex aromas of butter, brown sugar, macadamia nuts and a floral touch.
Pionnier is manufactured in small batches and sold in some specialty stores and at the Fromagerie du Presbytère, located in Sainte-Élizabeth de Warwick.
