This semi-soft, uncooked, pressed cheese is interior ripened for over 4 weeks and made with pasteurized milk. Under its yellow film is a smooth, pale yellow cheese that has a milky taste and aroma with hints of slightly tangy cream. It has a somewhat creamy texture that is richer than that of the St-Paulin Fritz.
Port-Royal resembles Port-Salut, a French cheese, except that the addition of cream accentuates its flavour.
Port-Royal is available from the cheese maker, at specialty cheese shops and in some supermarkets.
