This semi-soft, surface-ripened cheese made from pasteurized milk has a somewhat supple washed orange rind. Its cream-coloured interior is tender and has a pronounced, complex aroma. Its flavour is fruity with subtle notes of salted butter and an even texture that melts easily. Offred in wedges or slices.
This cheese pairs well with potatoes, gherkins, pickled onions, cured meats and fondue meat. This type of cheese is often called “fromage à râcler” (French for “scraping cheese”), referring to the way it is traditionally eaten.
