This semi-soft, surface-ripened cheese made from pasteurized milk has a somewhat supple washed orange rind. Its cream-coloured interior is tender and has a pronounced, complex aroma. Its flavour is fruity with subtle notes of salted butter and an even texture that melts easily. Offred in wedges or slices.

This cheese pairs well with potatoes, gherkins, pickled onions, cured meats and fondue meat. This type of cheese is often called “fromage à râcler” (French for “scraping cheese”), referring to the way it is traditionally eaten. 

La Raclette DuVillage can be used in a traditional raclette served with potatoes, fine foods and green salad. You can also widen your horizons and use it to kick up your next Chinese fondue, pasta or pork tenderloins. Feel free to use your imagination!

La Raclette de Portneuf is available from the cheese maker, at specialty grocery stores and cheese shops, and in most supermarkets.
