M.F. : 28 % Moisture : 46 %This lactose-free semi-soft washed-rind cheese is made with pasteurized milk. It features an aroma of hazelnuts and a sharp flavour. Its subtle and refined taste is due to a long traditional ripening process. For eight to ten weeks, the cheese rests on high-quality pine boards until it reaches perfection.
Its name, Raclette des Appalaches, is inspired by the fact that the cheese maker is located in Plessisville, at the foot of the Appalachian Mountains, a region where the climate is especially conducive to growing exceptional forage and raising dairy herds of unparalleled quality.
Raclette des Appalaches is available from the cheese maker, at specialty cheese shops and grocery stores, and in most supermarkets.
