This artisanal blue-veined cheese is made from pasteurized milk. Aged for two to three months, Rébellion 1837 is a full-bodied cheese whose name comes from the fact that people who prefer mild cheese sometimes consider lovers of blue cheese rebels. The packaging shows the historic battle of the 1837–1838 rebellions.

Rébellion 1837 cheese is available from the cheese maker and at speciality grocery stores and cheese shops.
