This firm cheese is made from pasteurized milk using artisanal methods. A 60-day ripening under pink wax gives this Gouda an ivory colour and a supple texture. Its interior is dotted with little holes. It has a milky aroma of salted butter and a mild, salty flavour. It’s great for snacks, in raclette, on pizzas and in all your cooked dishes.
The pink ribbon is a symbol used by individuals, organizations and companies that are involved in raising breast cancer awareness, like the Fromagerie La Vache à Maillotte. Since Rose’s introduction in February 2011, $1 has been donated to the Quebec Breast Cancer Foundation for every kilo sold.
Rose is available from the cheese maker, in specialty cheese shops and in some supermarkets.
