Interior-ripened for at least 45 days, this orange rindless cheese is dotted with holes called “eyes.” It is firm and dense, yet elastic. Made from whole pasteurized milk, this cheese has a mild hazelnut aroma typical of Swiss Emmental cheeses along with flavours of almond and salted butter. This is the orange version of the Mont Saint-Benoît cheese.
