This semi-soft surface-ripened cheese is 100% made with pasteurized whole milk and contains no modified milk ingredients. In its taste and texture, it resembles Reblochon, a French cheese. This exceptional cheese has authentic flavours and a creamy, melt-in-your-mouth texture with aromas of butter and hazelnut. Its washed rind has a fairly strong taste that balances the softness of the interior. It is excellent in a brunch and is perfect for your cheese platters or to be used in a variety of recipes, such as French onion soup.
The cheese appeared in 2013, the year of the 150th anniversary of the birth of the strongman Louis Cyr, known as the Canadian Samson. The name of Le Samson cheese came naturally when the Louis Cyr festival offered cheese maker Raymond Métayer the opportunity to use a drawing of Cyr, created by painter and sculptor Michel Binette, for the cheese’s label. You can also see this drawing on the monument at 105 Louis Cyr Road in Napierville, the birthplace of Louis Cyr.
