This cheese maker’s Tortillon Coaticook is also made from pasteurized whole milk and submerged in brine. The curds are firm and come in two varieties: regular or smoked. They have a mild, salty, milky taste, and the smoked version is slightly spicy. (M.F.: 25% Moisture: 44%)
The Saumuré Coaticook and curds are delicious with beer or as a snack.
These cheeses are available at the Laiterie de Coaticook and in some food markets in the Eastern Townships.
